Crunchy Banana Nut Granola

Granola with oats, walnuts, cinnamon, and banana slices, ready for your yogurt bowl!

This crunchy banana nut granola has all the warm comfort flavors of my favorite banana bread recipe (which is in the simple recipes here!), But it’s a little more suitable for a Saturday breakfast.

Brown butter and brown sugar are perfectly combined with toasted oats and walnuts.

But the real secret of this granola magic is how the sliced bananas are caramelized and chewed after they have been cooked in the oven for a long time. Unlike oatmeal and nut crunch, it has excellent texture.

The story of how I met Alice is ridiculous. We were in Austin for a conference and Alice was sitting in the hotel lobby with a few people I knew. There were no seats, so I dropped on the arm of a sofa near my friend. Alice looked up and introduced herself, and I said, “Omegosh, I like your site.” I think I avoided the complete Finger Dome, but barely.

A few years go by, and now we’re only a few miles away. We’ve shared food, baked muffins, watched a great concert, and even talked on the panel together. I didn’t even have to think about my answer when Ellis suggested that I start writing for simple recipes. Yes. Yes. Yes.

Ellis told me to start thinking of fun and interesting granola recipes to share with you, and my mind went over the drive. Granola is something I often make and its combinations are practically endless.

I think it’s fair to say that we decided on the banana nut granola, considering Alice’s banana bread was one of the first recipes I made from this site. So, for the most popular thing on simple recipes and one of my favorite treats, please enjoy this Brown Butter Banana Nut Granola.
