Pressure cooker chipotle chicken and rice bowls! Like fast food takeout, but better. Use the pot-to-pot method to cook chicken and rice together in your instant pot or pressure cooker.
My husband is a big fan of Chapotal – both spicy, smoked chili himself and Restaurant China. He described this dish as better than Chipotle’s quick casual burrito cups, so I call it a win!
This is definitely more budget friendly than ordering a takeout for four people. It cooks almost as soon as it takes us to drive and have dinner!
Both chicken and rice pack a spicy walp with this recipe. Boneless chicken thighs are cooked in a homemade chapotal sauce (a blender sauce that is mixed together), and with chopped jalapeیوo peppers, red peppers and green onions just before serving the rice. Is thrown away.
If you’re not a chili peer like me, you can definitely cut the spice. Use only one tablespoon of smoked paprika instead of chapotal pepper, and skip the jalpino.
I use the “pot in pot” method to make this recipe, and cook the rice and chicken together in my 6 quart instant pot. It sounds complicated, but it’s actually very simple!
You just combine the chicken and chapotal sauce at the bottom of the pot, put a metal steam rack on top, and then place a cup of water and rice on the tray. After cooking, fluff the rice and mix it with the spicy additives.
For this method of cooking in a pot, be sure to use a steam rack for cooking rice that is about 3 inches high and use a small (1 1/2 quart) stainless steel cup. It is important to lift the bowl over the chicken and you are still able to close the lid.
Any tall grain white rice will work well for this recipe. I also managed to cook it quickly with brown rice (Trader Joe brand).
If you wish, you can also cook the rice separately on the stove while the chicken is cooking in the pressure cooker. Without rice, it takes about 10 minutes for the pot to come under pressure.
Serve the chicken on top of the rice, and in each bowl sprinkle with chopped jalapeیوos, lime wedges, and cottage cheese or other light cheese.
